Soy Sauce Fried Chicken.  Chicken is poached in soy sauce with spices then deep fried resulting to a tender, juicy chicken on the inside and crispy skin on the outside.  It is so delicious.

Little darling Pumpkin is always delighted when I cook chicken.  Well, children love fried chicken.  Who doesn’t?  Even us adults love it too 🙂 .

Soy Sauce Chicken is a traditional Cantonese/Chinese recipe in which the chicken is cooked with soy sauce.

I am using chicken leg quarters in this recipe as mentioned above.  I like this style of cooking because I am sure that the chicken is well-cooked because it goes through poaching.  Deep frying is only to brown the chicken and make it more delicious.

Ingredients

Ingredients for this recipe are the following:

  • chicken – You can have whole chicken if you want but you may adjust cooking time like adding some more minutes so that your chicken is cooked through.  For this particular cooking, I used chicken leg quarters.
  • Soy Sauce
  • Brown Sugar
  • Chinese Rice wine (optional)
  • Onions
  • Garlic
  • Ginger
  • Star anise
  • 2 cups water
  • Cooking oil for deep frying

How to Cook Soy Sauce Fried Chicken

First, you have to prepare the poaching water.  In a cooking pot, put in 2 cups of water.  Then add 1/2 cup of soy sauce, 5 tablespoons of brown sugar, 3 tablespoons of Chinese rice wine, 2 pcs star anise, onions, garlic and ginger. Mix it well and bring to a boil.

Once boiling, add the chicken and reduce the heat.  Slow cook for 10-15 minutes.You may add cooking time for poaching if you are using whole chicken. Once done, remove the chicken from the cooking pot and set aside. Let it sit for about 5 minutes.

In a frying pan, put in cooking oil and deep fry the chicken until golden brown.  Transfer to a plate with paper towel to remove excess oil.  Transfer to a serving plate and serve.  You may chop your chicken as preferred.

What dips or sauce goes well with Soy Chicken

You can dip you chicken with gravy.  You may also just use ketchup. Another option is to use combination of ketchup and mayonnaise.
