Start by preparing the poaching water. In a cooking pot, put in 2 cups of water. Then add 1/2 cup of soy sauce, 5 tablespoons of brown sugar, 3 tablespoons of Chinese rice wine, 2 pcs star anise, onions, garlic and ginger.
Mix it well and bring to a boil.
Once boiling, add the chicken and reduce the heat. Slow cook for 10-15 minutes.
Once done, remove the chicken from the cooking pot and set aside. Let it sit for about 5 minutes.
In a frying pan, put in cooking oil and deep fry the chicken until golden brown.
Transfer to a plate with paper towel to remove excess oil.
Transfer to a serving plate and serve. You may chop your chicken as preferred.
