Soy Sauce Fried Chicken.  Chicken is poached in soy sauce with spices then deep fried resulting to a tender, juicy chicken on the inside and crispy skin on the outside.

Ingredients

  • 4 pcs Chicken leg quarters
  • 1/2 Cup Soy Sauce
  • 1/2 Cup Brown Sugar
  • 3 tbsp Chinese rice wine optional
  • 1 medium size Onions chopped
  • 5 cloves Garlic chopped
  • 1 thumb Ginger chopped
  • 1 pc Star anise
  • 2 cups Water
  • 4 cups Cooking oil for deep frying

Instructions

  • Start by preparing the poaching water. In a cooking pot, put in 2 cups of water.  Then add 1/2 cup of soy sauce, 5 tablespoons of brown sugar, 3 tablespoons of Chinese rice wine, 2 pcs star anise, onions, garlic and ginger.
  • Mix it well and bring to a boil.
  • Once boiling, add the chicken and reduce the heat.  Slow cook for 10-15 minutes.
  • Once done, remove the chicken from the cooking pot and set aside. Let it sit for about 5 minutes.
  • In a frying pan, put in cooking oil and deep fry the chicken until golden brown. 
  • Transfer to a plate with paper towel to remove excess oil. 
  • Transfer to a serving plate and serve.  You may chop your chicken as preferred.
