Cucumber tomato onion salad is a light, refreshing side and a perfect pair for fried and grilled dishes. We love to pair it with this  soy sauce fried chicken, fried calamari  and turbo broiled pork belly or lechon kawali.

We even love it at breakfast.  We enjoy it together with either pork tocino or chicken tocino.

Cucumber Tomato Onion Salad Recipe Ingredients

Here are the ingredients you need to make this salad.

Cucumber – Fresh, young cucumber is ideal for this salad. It is delicious, crispy and oh so yummy.

Tomato – You may choose cherry tomatoes or any tomato available with you.  Use the ripe ones because they add lovely color to this salad.

Red Onion – The sweetness of the red onion provides good flavor to this salad.  Although it has a more intense smell, it is suited for this salad.

For the Vinaigrette

White vinegar – I am using white vinegar.  However, you may use apple cider vinegar if preferred.

Sugar – I am using brown sugar for this salad.  Alternatively, you may use white sugar.

Salt – I use rock salt.  This gives contrast to the sugar.  The goal is to have a vinaigrette that has a medley of sweet, savory and sour taste, perfect for this salad.

Chilli powder or Chilli Flakes (optional) – if you want it spicy

How to Make Cucumber Tomato Red Onion Salad

Start with preparing the ingredients.  Peel and cut cucumbers into thin slices.  Wash and cut tomatoes into small dice and cut thinly the red onions and set aside.

Mix vinegar, sugar and salt and see to it that they are well-dissolved.

Arrange the sliced cucumbers, tomatoes and red onions in a plate and pour over the vinaigrette.  Give it a toss and mix.  You can enjoy it right away or refrigerate for about 30 minutes before enjoying it.

Yes, you may.  This version is the simplest yet flavorful way of making this salad.  However, you can further enhance its flavor profile.  You can add ground black pepper, red or green bell peppers, ginger, parsley or spring onions for garnish.

As mentioned above, it is best paired with grilled and fried goodies.  Grilled and fried foods is perfect complement with this salad.

Can You Store this Salad for Later Use?

Absolutely.  You can put it in airtight container and put in the fridge.  It can last up to 2 days.  However, it is best enjoyed just during the day you made it.
