What is fried Calamari

Fried Calamari is made of baby squid that is soaked in milk as tenderizer, dredged in a seasoned flour then deep fried.  It is so yummy and just as good or even better than what you can get in restaurants.

Calamari is the term used in the Mediterranean  countries and is a popular appetizer.  It became famous in the US and the rest of the world.

Ingredients

2 cups Squid – cleaned cut into rings.  This is the main star of this recipe.  You can get baby squid in the wet market, supermarket and their price is reasonable.

I am using the squid body and tail for this recipe as I added the head of my baby squids to my spicy squid version as my loves really like it cooked that way.

1 tablespoon – Garlic Powder.  It adds so much flavor to the flour mixture.

1 teaspoon – salt.  I am using rock salt for flavor.

1 teaspoon – Paprika.  It adds flavor, a bit of color and nice texture to the calamari.

1/2 cup – milk.  For some reason, there is a chemical reaction of the squid when mixed with milk that it makes it tender.  It results to a flavorful, yummy and crispy calamari on the outside yet tender on the inside.

2 cups – all purpose flour.  It makes the calamari crispy.

2 cups cooking oil.  We use this oil for deep-frying.

1 teaspoon Lemon juice.  This is to marinate the squid for added flavor.

How to Make Fried Calamari

Start with cleaning the squid.  Remove its ink and clean the the body of the squid.  Once cleaned, cut it into rings and pour some lemon juice into it and set aside.

Mix flour with garlic powder, salt and paprika in one bowl and put milk in another bowl.

Soak the squid/calamari in the milk then dredge it into the flour mixture.  Deep-fry in cooking oil for 2-3 minutes.

Remove it from the frying pan using slotted ladle and place in a plate with paper towel to remove excess oil.  Transfer to a serving plate and serve with a tomato-based sauce of your preference.
