Jackfruit seeds curry with spinach and Squash is a delight to devour.  It is wholesome and yes, vegan.

I have plenty of jackfruit seeds and I have been thinking of ways to use it as I do not want to throw it away.  I boiled some for my snacking and set aside some to mix it with this delicious curry.

I reserved some to be toasted for my snacking as well.

Ingredients

1/2 cup Boiled Jackfruit seeds

1 cup Squash – cut in cubes

5 pieces Green Chilli pepper

1 thumb Ginger – chopped

3 cloves Garlic

1 medium size Onion

1 teaspoon Salt

Curry Powder

1.5 cups Coconut milk

2 tablespoons Cooking oil

1/2 cup water

How to Cook Jackfruit seeds Curry with Squash and Spinach

First, you need to boil the jackfruit seeds to make it soft.  Once done, remove the outer shells of the seed and set aside.

Saute onion ginger and garlic in cooking oil under medium heat.  Add in the curry powder.  Put in the squash and mix well.  Add water and simmer for 2-3 minutes.

It is now time to add the coconut milk. Season with salt and chilli pepper.  Simmer for 1-2 minutes. Adjust taste to your liking.

Add in the the cooked jackfruit seeds and spinach and simmer for 1 minute and it is done.  Transfer to a serving bowl and serve with rice.

Can I make Ahead this dish

Absolutely.  You can put it in air tight containers and place it in the freezer.  It can last up to 5 days.  All you have to do is reheat it once you want to consume it.
