Home-made Pork Tocino (Filipino Sweet Cured Pork) is a Filipino favorite breakfast staple. It is perfect for Tosilog, a popular Filipino breakfast dish consisting of Tocino, sinangag and itlog  (tocino, fried rice and egg).

Originally, tocino is bacon from Spanish which is usually a pork belly and formed into cubes.

Its mixture of savory and sweet flavors  is perfectly suited to the Filipino palate.  It complements with fried rice and sunny side up egg making up the famous Filipino Tosilog breakfast favorite.

What pork cuts are perfect for Tocino

Preferably, pork shoulder is good for tocino because you get the lean meat with the mixture of a little bit of fats making the tocino not so dry.  However, you may also use pork belly  which is also great for making tocino.  Ultimately, it’s your call which part you personally prefer.

Ingredients

500 grams – Pork shoulder

6 tbsp – Tocino mix

1/2 cup – White sugar (you may also use honey)

1/2 cup – Sprite or soda lemon

1 tsp – Soy sauce

1 tsp oyster sauce

pinch of salt

Ingredient Substitutes

Tocino mix – if you are not using tocino mix, you can substitute it with garlic (5 cloves) and freshly ground black pepper (1tsp).  Add ketchup for color.  You may also use annato powder (1tsp) for food coloring.

Sprite – its purpose in this recipe is tenderizing agent.  You may use apple juice to substitute it in this recipe.

How to Make Tocino

It is just easy to make this recipe because all you have to do is mix all the ingredients together and segregate into portions that is good for your family’s one meal.

To start, prepare the pork.  Slice thinly the pork shoulder or belly or whatever pork cut you want to use.

In a mixing bowl, put in the pork and the rest of the other ingredients listed above.  You can then put it in food container and place inside the freezer.

I personally put mine into zip locks that contain just enough for one meal.  That way, I can just take one that is just right for us without contaminating the others because they are placed separately in their own zip lock containers.

What is it good for?

As I repeatedly mentioned above, this is perfect for breakfast.  However, it can also be consumed in any other meals of the day like lunch or dinner.  Really. Why not?

It can also be perfect pair for beer or brandy in drinking sessions.  Consume it as booze appetizer or pulutan.

How to Cook Pork Tocino

Place the tocino in a frying pan and simmer until its stock or sauce is reduced.  Once the sauce caramelizes, put a little bit of oil like 1-2 tablespoons.  Fry it until sauce becomes sticky  that it clings with the meat.  Transfer to a serving plate and serve.
