Homemade Spanish Sardines is a delicious dish made from fresh sardines fish. It is cooked with water, olive oil together with some veggies and spices.
It is so delicious and you can place it in a jar to be consumed and enjoyed later or some other time.
I love cooking this dish because they are healthy and I can just store them in the fridge and get some when I want to enjoy it.
The price for this fish is reasonable in our local market. So when I spot fresh sardines in the market, I never fail to make this dish.
What is Sardines
Sardines are small oily fish also known as Pilchards under the herring family of fish. You can often find them canned but you can also find fresh ones sold in the market.
Ingredients
You will need the following ingredients to make this delectable homemade Spanish Sardines:
1 pound Sardines fish- gutted, head and tail removed
1 tablespoon rock salt
¼ cup green olives
1 cup olive oil
5 pieces red chili
5 cloves garlic, crushed
1 tablespoon peppercorn
¼ cup bay leaves
4 or more cups water
How to Make to Spanish Sardines
You can either use pressure cooker to cook the sardines to tenderize the fish faster. However, you may just also slow-cook it for about an hour or more until fish is tender.
It is just easy to make this dish. Start with cleaning the fish. Cut the head and tail and remove its gut.
Pile and arrange evenly the sardines at the bottom of the cooking pot. Then spread evenly the carrots, peppercorns, chilli, bay leaves, olives and garlic. Sprinkle with salt. Pour water and olive oil and do not mix or stir.
See to it that the sardines are submerged in water, so add some as needed. Bring it to a boil over low-medium heat for about 45 minutes or longer until fish is fully cooked and the sauce is reduced until only the oil is left.
Transfer to a serving dish and enjoy!

Notes
- You may use sterilized glass jar to store your Spanish sardines to enjoy for a later date and put it in the fridge.
- Other fishes may be a substitute in making this dish. You may use mackerel and milkfish.
