Maja Blanca is a delicious dessert that you can serve on any occasion. Also known as Filipino Coconut Milk pudding, it consist of coconut milk, corn kernels, sugar and condensed milk and cornstarch which makes it firm and have its gelatin-like texture.

Yes, we do it occasionally at home out of a whim. It is delicious and easy to make with just a handful of ingredients.

Which country does it Originated

Maja Blanca originated in Spain and has become a popular Filipino dessert.  This is the Filipino adaptation of Majar blanco which means white delicacy. It is creamy, sweet and delicious.

Maja Blanca Ingredients

  • Coconut milk/cream –  3 cups–  It is one of the basic ingredients for maja blanca.  You can use freshly squeezed coconut milk or you may use the tin coconut milk if that is what is available to you.
  • Cornstarch  or corn flour- 2 cups – It makes this recipe firm and have that gelatin-like consistency.
  • Corn kernels – 1 cup –  I used tin sweet corn kernels for my recipe.  You may opt for the tin cream corn kernels if you like.
  • Condensed milk -1 and 1/2 cup.  This gives its sweet flavor.
  • Evaporated milk –  1 cup – this adds its creamy texture.
  • White Sugar (optional)-1/2 cup – You may add sugar if you want it sweeter.  You may taste the mixture before putting the cornstarch so that you can decide whether to add sugar or not.  My loves are really into sweets so I added sugar to my recipe.
  • Water – 1 cup – use this to dissolve the cornstarch.

Why my Maja Blanca is soft and not firm

Possible reasons it is not firm are the following:

  • The mixture is lacking enough cornstarch to make it firm enough when it is done.
  • It is not well-cooked.

How Long can You Store it

You can store it in the freezer for 2-3 days. Keep it in a close container and it should be good.  It actually tastes better after a day or two after cooking.

How to Make Maja Blanca

This is one of the easiest dessert recipes you can do.

Put the coconut milk in a pan together with the condensed milk, evaporated milk and corn kernels.  Bring it to a boil.  Taste the mixture if the sweetness is enough to your liking.  Add sugar if needed. You can skip the sugar if sweetness of the mixture is good enough for you.

Meanwhile, mix the cornstarch with water until there are no more lumps and the cornstarch is completely dissolved.

Reduce the heat to low and add dissolved cornstarch to the mixture while mixing it well.  Keep on mixing with the ladle for about 3 minutes or until cornstarch is well done and have that sticky consistency, seeing to it that you don’t burn the bottom.

Transfer to a flat rounded or square dish. Top it with your preferred toppings. You can top it with grated cheese like what we did.  The most common and traditional topping is the latik or coconut curd.  Another option is to top it with toasted desiccated coconut.

Notes

  1. Keep on stirring the mixture with the ladle once you add in the cornstarch mixture
  2. Do not forget to reduce the heat to low when you put in the cornstarch to avoid burning the bottom of your mixture.
