Paksiw na Pata (Pork Hocks Stew)

Paksiw na Pata (Pork Hocks Stew) is a delicious way of cooking pork hocks. Pork is stewed in water, sugar, vinegar and soy sauce mixed with some spices in this style of cooking.

Ingredients

  • 1 kilo Pork Hocks cleaned and washed
  • 1 cup Soy sauce
  • 1 cup Brown Sugar
  • 8 cloves Garlic chopped
  • 5 tbsp Vinegar
  • 3 pcs Bay Leaves
  • 1 tsp Whole Peppercorn
  • 1/2 cup Dried Banana Blossom you may use dried lily flowers as substitute
  • pinch Salt
  • 5 cups Water

Instructions

  • In a cooking pot, put water, garlic, bay leaves and peppercorn together with the pork hocks. 
  • Bring it to a boil and remove scum that float. 
  • Add in the soy sauce.  Let it boil for 1-2 hours until pork becomes tender. 
  • Put in the sugar and simmer for 5 minutes. 
  • Add in the vinegar and dried banana blossom and simmer for 3 minutes or until desired thickness of the sauce is achieved.
  • Taste the sauce and add a pinch of salt if needed. 
  •  Transfer to a serving plate and serve.  This is perfectly complemented with steamed rice. Enjoy!
