- 400 grams Ampalaya or bitter melon sliced into bite-size pieces
- 3 pcs eggs beaten
- 1 medium-sized Onions chopped
- 5 cloves Garlic chopped
- pinch Salt
- pinch Pepper
- 2 tbsp Cooking oil
Start by cutting the ampalaya into half. Remove the seeds and slice the remaining ampalaya into bite-size pieces.
Saute onions and garlic and add in the sliced ampalaya until it is cooked yet still crispy.
Add the salt and pepper to taste.
Add the beaten eggs, mix and coat it with the ampalaya.
Transfer to a serving plate and serve.
