Mung Bean Soup with Pork (Ginisang Munggo).  Ginisang munggo/monggo is a delicious soup wherein mung bean is boiled and mashed until creamy and mixed with pork resulting to a delicious, filling soup.

Ingredients

  • 1 cup Munggo Beans
  • 6 slices Pork ribs
  • 1 medium-sized Onions chopped
  • 5 cloves Garlic chopped
  • 1 tsp Salt
  • 1 tsp Ground Pepper
  • 1 sachet Knorr Pork cubes
  • 1 pc Tomatoes chopped
  • 1 cup Moringa Leaves or Malunggay
  • 1 pc Bell Pepper chopped
  • 2 tbsp Cooking Oil
  • 2 cups Water

Instructions

  • Start with the mung beans.  Wash it and discard the floating ones as you wash the beans. 
  • Place it in pot with water and bring it to a boil.  Soften the beans in a low to medium heat until tender.
  • Transfer it to a bowl and mash it by just using a spoon and pressing it with the soft mung beans. Set it aside.
  • Saute onions, garlic and tomatoes using 2 tablespoons of cooking oil in medium heat. 
  • Add in the Knorr pork cubes and mix it well. 
  • Put the pork ribs in the pan and saute it as well until meat becomes white/ish in color.  Add in the mung beans and water. 
  • Bring it to a boil and simmer until pork is tender, about 10 minutes.
  • Add in salt and pepper.  Simmer again for 3 minutes. 
  • Check the meat if it is already cooked and taste the soup.  Adjust taste to your liking. 
  • Once pork is cooked and the soup is enough, you can now add the bell pepper and the malunggay leaves.  Simmer for just 30 seconds and it is done.
  • Transfer to a serving bowl and enjoy! It is best paired with rice.

Notes

1. You may add water as needed when you tenderize the pork ribs.
2.  Adjust the water as you simmer pork and tenderize it.  Add more water if you want a thin soup.
