  • Frying Pan


  • 400 grams Ampalaya or bitter melon sliced into bite-size pieces
  • 3 pcs eggs beaten
  • 1 medium-sized Onions chopped
  • 5 cloves Garlic chopped
  • pinch Salt
  • pinch Pepper
  • 2 tbsp Cooking oil


  • Start by cutting the ampalaya into half.  Remove the seeds and slice the remaining ampalaya into bite-size pieces.
  • Saute onions and garlic and add in the sliced  ampalaya until it is cooked yet still crispy. 
  • Add  the salt and pepper to taste.
  • Add the beaten eggs, mix and coat it with the ampalaya. 
  • Transfer to a serving plate and serve.
